------------------------------------The Menu----------------------------------

First Course (Canapé)

🍴Smoke cured New Zealand Salmon Pancakes & Cheese Croquette with Beetroot

🥂NV Stefano Lubiana Brut Reserve, Derwent Valley, Tasmania, Australia

"It’s a crisp, racy, fresh-faced style in general and yet it has complexity and breadth. Love the freshness, love the flavour. Red and green apples, citrus, bread and roses. Satisfying and refreshing."

✨95 Points | Huon Hooke

✨93 Points | Campbell Mattinson

Second Course

🍴 Sun-kissed Tomato and Mozzarella Salad

🥂2021 Delinquente Screaming Betty Vermentino, Riverland, South Australia, Australia

"Super bright, upfront acidity – lemon lime tang – is what pops from the glass, instantly putting you in the thirst quenching zone. The mid-palate is where the texture and length comes in, nashi pear and green apple pops against orange peel breadth and juicy, creamy mouthfeel. The acid ties it all together and gives length, enhanced by the classic Vermentino briney, sea spray haze. As always, chargrill those sardines and enjoy in the sunshine."

✨89 Points | The Wine Front

🏅Top 50 Wine Makers | Young Gun of Wine

Third Course

🍴 Angel Hair Pasta with sautéed Australian Lobster

🥂2020 Giant Steps Sexton Vineyard Chardonnay, Yarra Valley, Victoria, Australia

“This offers a vibrant, mouthwatering mix of lime peel, peach and pineapple flavors on a sleek and juicy frame, with hints of spearmint, matcha green tea and fresh ginger that linger on the long, lingering finish."

✨93 Points | James Suckling

✨93 Points | Campbell Mattinson, The Wine Front, July 2021

Forth Course

🍴Tom Ka style Chiayi Clam served with Garlic Bread

🥂 2021 Penfolds Bin 51 Eden Valley Riesling, Eden Valleny, South Australia, Australia

"No shortage of flavour, it’s the fineness and purity of this youthful riesling that immediately impacts upon that first sip. Be assured, no lack of acidity, no lack of attaque …albeit gently. Mid-palate flavours– finger lime, lemon/lime zest, again sherbet, juniper berries, mirin, and a slatey/crushed marble chalkiness."

✨96 Points | James Halliday

✨96 Points | Andrew Caillard MW

✨96 Points | Tyson Stelzer

Fifth Course

🍴Peking style Pingtung Duck with Crepe

🍷2015 Yangarra Estate Vineyard Old Vine Grenache, McLaren Vale, South Australia, Australia

"To start, a whirl of perfectly ripe raspberries and red currants, patchouli and subtle Middle Eastern spices. The palate is tightly wound, with raspberry-like acidity, more pronounced tannins in the background. They'll meet up in time."

✨95 Points | Jane Faulkner

✨95 Points | James Halliday

✨93 Points | James Suckling

Sixth Course

🍴Roaming grass-fed, aged Australian Waygu Steak served with Vegetables

🍷2019 Penfolds Bin 389 Cabernet Shiraz, South Australia, Australia

"Instantly fresh and fleshy. Some overt single-varietal cabernet and shiraz fruits still sit separate …time will unite..

Expected liquorice, stewed plum and blackcurrant, with dark chocolate and mocha in the background. Savoury and salivating – mouth-watering, succulent acidity. This acidity interplays with integrated tannins – coating the mouth and adding length.."
