壹 First Course
🍴Gillardeau oysters
法國吉拉朵生蠔
🥂No.1 Family Estate Cuvee Blanc De Blancs
"A perfect balance between ripe, fresh fruit and toasty yet creamy yeast. The wine is held on lees for two years or more allowing the perfect level of maturity. It displays a fine, consistent bead and firm mousse resulting in a complex character. The palate is smooth and seamless with a wonderful balance of acidity, giving a wine of elegance and style."
🥇Best New Zealand Sparkling Wine - Champagne & Sparkling Wine World Championships 2021
貳 Second Course
🍴 Cobia Fish
海鱺魚
🥂2021 Giant Steps Yarra Valley Chardonnay
“Hand-picked, chilled, whole-bunch pressed, wild fermentation on full solids, no stirring, no mlf, matured in French oak (10% new) for 8 months. The bouquet is slightly funky/reduced, but it's elegance and purity that are the essence of this wine, made by a master of the art.”
✨98 Points | Best of Chardonnay – James Halliday
參 Third Course
🍴 Lily Bulb Chicken
百合嫩雞
🥂2020 Sexton Chardonnay
“Lean but flavorsome, if that is possible. Textural and intense but rapier-like through the finish.”

✨93 Points | Huon Hooke, The Real Review, June 2021
肆 Forth Course
🍴 Italy Black Truffle Rissotto
義大利黑松露燉飯
🍷2020 Giant Steps Applejack Vineyard Yarra Valley Pinot Noir
The clarity, the purity, the elegance and the perfume that the Upper Yarra Valley Applejack Vineyard brings to the party is immediately recognisable. Equally insistent is the sheer power of the red fruits and spices hidden by the light colour of the cloak. 66 barrels/barriques.

伍 Fifth Course
🍴New Zealand Deer
紐西蘭鹿肉
🍷2019 Giant Steps Harry’s Monster
“This is complex, energetic, ripe and just plain lovely…Seductive but with extras. True to itself but not without flair.”
✨94 Points | Campbell Mattinson, The Wine Front, March 2021
✨93 Points | Nick Stock, Jamessuckling.com, July 2021
✨93 Points | Amanda Yallop, The Real Review, March 2021
陸 Sixth Course (Dessert)
🍴Cannoli
瑞可達起士捲
🥂Giesen The Brothers Late Harvest Marlborough Sauvignon Blanc
This butterscotch-hued sticky is downright hedonistic. The highly perfumed nose explodes from the glass in rays of sun-drenched orchard fruit, candied pineapples and orange slices, pressed yellow flowers, ginger and honey. The palate is like liquid gold, unctuous and very sweet, with just enough acidity to buoy the intensely concentrated fruit. The marmalade finish is endlessly long.
